Food plan



One of my downfalls is healthy eating. I plan well, I find recipes, we buy the ingredients, then after work I get lazy and have no desire to cook it. We order in or heat up pizza.

I want to do better this year, so I've decided to make my meals on Sunday. This way I have all the meals I had planned for the week cooked and all I have to do is re-heat them. This may not sound appetizing to you, but it's perfect for me. I'll add a frozen vegetable to many of them and be good to go.

This week's recipes are all Weight Watcher approved:
  • Veggie Chili
  • Deep Dish Pizza Casserole
  • Taco Bake
  • Tortellini Soup
We have a couple unhealthy foods left over from the holidays, which we will eat because I am not going to let them go to waste - money-wise or meal-wise {there are people in the world who do not have food and I am not going to let them go bad}. If we sprinkle them in between healthy foods, it won't be too bad.

My goal is each week determine the meals for the week and then make them on Sunday. This should reduce how many times we skip the healthy meal for convenience. Time to write up the grocery list and get started cooking!

January 2015 Review


Hard to believe January 2015 is already over. That went quick! It seems as you get older, the time really does fly by!

January did not go as well as I had hoped. Not by a long shot. I didn't make a single goal I set for myself. As a review, here are the goals I set for myself in January:

Here's a breakdown on each:

1. Lose 7-8 lbs: Gained 1.6 pounds
2. Run 48 miles: 16 miles {32 miles under goal}
3. Follow meal plan: Not 100%, but actually not too far off. Some nights swapped a meal from later in the week. Ate out a few times more than we should have, but overall stayed on track better than usual.
4. Read 10 books: 9
5. Post Eastern State Penitentiary photos: Still on camera

I will say that I missed a whole week of runs due to my back the first full week of the month, so I knew I wasn't going to hit that 48 miles for the month. But, then I just lost total motivation. I couldn't bring myself to go out and run. Some of it had to so with snow, some of it had to do with my work schedule changing around, but mostly I just couldn't bring myself to do it. I lost the desire to go out. I don't know what happened, but this whole running thing just wasn't it this month.

Kinda annoyed I missed my reading goal by one book. Bah! Last January I read 19. Guess that's tied to that whole I lost the desire to do it this month. 

Not sure why the photos didn't come off the camera. I honestly thought about it many times. It just never translated into me actually doing it. Maybe this month?

So, I guess February is a new month and a new start. The monthly meal plan is written out. I do need to go over goals for the month, but at least I kept the one positive thing going...the meal planning.

Motivational Monday

Good morning! Happy Monday to ya! How was your weekend? Mine was better than expected, thanks for asking. :)

Today's quote {to me} fits January perfectly. It is all about the now, something many of us totally miss in our beating ourselves up over the past and hoping for a better future.

Last year may not have gone as planned. I know mine didn't! But, it's over. The year is past and we can safely leave it there. We are no longer tied to it. I'm not writing 2014 on things anymore, so I don't have to think about what went wrong every time I see the year.

2016 is a whole year away. Sure, I'm making plans for things in 2016 - my 15th wedding anniversary is in 2016. I'm deciding now how I'm going to pay for our trip back to Jamaica to celebrate, but I'm planning what I'm going to do now for next year. Something I have to do in the here and now.

So, here's to 2015! Here's to deciding what we want, figuring out how we're going to get it, going after it, and enjoying the hell out of it once accomplished! It's a whole new year. A whole new attitude. A whole new realm of possibilities all waiting for us to find them. Let's focus on today and forget about our failures of yesterday and daydreaming about our tomorrows.
