until the Disney Princess Half Marathon. In reality, at this point in the day, I'll be done. I'll have run through Epcot and the Magic Kingdom and will be (hopefully) showered and back at the Magic Kingdom for the day. After, of course, having crossed the finish line.
How crazy is that? I have two runs this week scheduled, each for 5 miles. Hoping the weather holds out because I've heard rumors of rain/snow tomorrow. My goal is to run Monday and Wednesday, then rest up for Sunday. I had a couple good times on my runs when I had 2 to 3 days rest in between, so I'm going to continue with that plan. Why not?
And now...to keep myself from freaking out too badly...

Just another day
Ah. Wednesday. Halfway through the week. Thank heavens! I have work issues and the quicker each week goes by (on one hand) the better.
Food was an issue at work today. I did fine most of the day. Breakfast was a simple Weight Watchers egg and cheese biscuit. Good. Lunch was a whole wheat pita with roasted red pepper humus, carrots, red and green peppers, and cucumber and applesauce (which was not in the pita). It was a delicious meal! I'm a little addicted at the moment to the pita/humus/veggie combo. Go try it. But then I was hungry this afternoon. Actually, I wasn't really that hungry. I was bored. And when I get bored, I like to eat. But I did stick to the food in my lunch box. Yes, I have a lunch box. Love it - the box that is! I had a package of fruit snacks and a package of peanuts. The nuts did it. Once I had those, I was good. And I had a TON of water today. Which is good.
Came home and did 50 minutes on the Wii Fit. :) It's so much fun. Did 10 minute free-style step and 20 minute free run. I also did some balance stuff, which I had recently unlocked. That was fun. I also did 2 sets of advanced step. I'm getting better, but not great. But, I'm still doing it, and that's what counts.
We had the last of the Deep Dish Pizza Casserole for dinner. We had thought about soup and sandwiches, but decided to be lazy. So, soup and sandwiches tomorrow. Then made my yummy new dessert. One banana, honey, coconut, walnuts, light Cool Whip, and cinnamon. Delish! Feel free to steal it. My gift to you.

Deep Dish Pizza Casserole
See, it is so good, it gets it's own post. LOL! Actually, it really is good. This is one of our favorites and it really is good. I got it from a Weight Watchers cookbook and since we love all things pizza, it was worth trying. It instantly become a family favorite!
This time around we played with it. We went with a thin crust pizza dough from Pillsbury, diced tomatoes rather than sauce, and veggie crumbles from Morningstar rather than beef. And honestly, it was great! I added Italian seasonings, garlic powder, and basil to the crumbles/tomato mixture. It really was good. Normally, it's 7 points (for those who do WW), but I'm sure it was reduced since we went with the crumbles/tomatoes/thin crust dough. In case you want to see what it looks like, here ya go!

It makes 6 servings, so we'll have yummy left overs this week. I think tomorrow night I'm going to cook up a turkey tenderloin. They have great ones at BJ's with a lime seasoning that's devine. Tastes good on it's own, in a salad, or with rice and veggies.
I also bought veggies for sandwiches. I am addicted to humus and so, I got veggies, red pepper humus and pita. I have a delicious humus, veggie, and pita for lunch tomorrow. I cannot wait! Is that sad, or what? LOL! I also think I'm taking a walk at lunch, unless it rains, then some Wii action when I get home, after WW weigh-in. Wish me luck!

Ahhhh...Wii
Spent some time this morning with those cute little Mii's of the Wii. One of my goals for today was 30-45 minutes on the Wii. So, I got up and barely rubbed the sleep from my eyes, when I got on. Did 10 minutes of yoga. I have a herniated disc and some bulging discs, so I think the yoga will be helpful in getting my balance in tune. It's not great, but improving.
Then I used the newly unlocked free run this morning. Did 10 minutes of running through Wii Land. Nice. It was nice. And it turns out you can turn the tv on while you run. It was interesting. Then off to hula hoop. :) That was fun. And then, decided to try something new. Did the step aerobics. I did HORRIBLE the first time. LOL! I got better as I went along. It made me laugh.
Wii is fun. I'm having a blast with it so far. And the best part is that since Friday, I've lost 1.8 pounds and have decreased my Wii Age. Yea! I'm pretty excited about it.
Tonight, we're having Deep Dish Pizza Casserole for dinner. The Eagles play today at 4:00 p.m., so I wanted something that's footballish, but healthy. So, Weight Watcher's Deep Dish Pizza Casserole for dinner. It's delicious!
Deep Dish Pizza Casserole
1 pound ground round
1 (15 oz) can chunky Italian-style tomato sauce
Cooking spray
1 (10 oz can refrigerator pizza pie crust dough
1.5 cups (6 oz) preshredded part-skim mozzarella cheese
1. Pre-heat oven to 425.
2. Cook meat in a nonstick skillet over medium-high heat until browned, stirring until it crumbles. Drain, if necessary, and return to skillet. Add tomato sauce and cook until heated through.
While meat cooks, coat a 13X9 baking dish with cooking spray. Unroll pizza crust dough and press into bottom and halfway up sides of baking dish. Top bottom of pizza with meat mixture.
4. Bake, uncovered, at 425 for 12 minutes. Top with cheese, and bake 5 minutes more or until crust is browned and cheese melts. Cool 5 minutes before serving. Yields 6.
